Originally, Chefs Mushrooms started by supplying fresh Oyster and Lion’s Mane mushrooms to well established farmer’s markets. Our mushrooms turned out to be deliciously amazing and became incredibly popular. The farmer’s market vendors urged us to grow more mushrooms, so we did.
In time we learned how to consistently cultivate amazing mushrooms with little to no waste. This was no accident. Behind the scenes, we were methodically developing our own substrates and liquid cultures to supply our grow facility and laboratory. The processes and operating procedures we now use for mushroom cultivation were developed through years of experimenting.
What really set us apart is (was) our secret to consistently successful harvests. We make our substrate the hard way, starting with 100% natural raw materials. Our wood is harvested from responsibily forested areas throughout the SW. Our farm fresh ingredients are grown and harvested on local farms throughout the SW.

Our cutting-edge process begins with meticulously prepared nutrient broth, typically a blend of purified water, light sugars, and essential minerals, carefully measured to support vigorous mycelial growth. Every tool—from flasks to syringes—is sterilized using high-pressure autoclaving to eliminate contaminants and ensure a pristine environment.
Inside a laminar flow hood, where filtered air sweeps away airborne particles, a small, clean sample of mushroom tissue or spores is introduced into the sterile liquid medium. With steady hands and aseptic technique, we complete the liquid culture innoculation and place it on a magnetic stir plate, keeping the solution gently moving to encourage even growth.
Over days, delicate strands of mycelium expand throughout the liquid, forming a living network ready for propagation. Each culture is inspected for clarity and purity, guaranteeing only the healthiest liquid culture is used.

Mushroom Cultivation Tips
- Use supplemented hardwood substrate
A mix of hardwood sawdust with bran (5–10%) boosts yields and speeds growth. - Sterilize thoroughly
Pressure cook substrate at 15 PSI for 90–120 minutes to eliminate contaminants—indoor grows are less forgiving. - Inoculate in a clean environment
Use a still air box or flow hood to prevent contamination during spawn transfer. - Choose the right containers
Filter patch grow bags work best, allowing gas exchange while keeping contaminants out. - Incubate in darkness or low light
Keep colonizing bags at ~70°F (21°C) until fully white with mycelium. - Ensure full colonization before fruiting
Don’t rush—wait until the substrate is completely colonized to avoid contamination. - Introduce fruiting conditions gradually
Increase fresh air, humidity, and indirect light once colonization is complete. - Maintain high humidity (85–95%)
Use a humidifier or fruiting chamber to prevent drying—turkey tail forms thin fruiting bodies. - Provide strong airflow
Unlike some mushrooms, turkey tail benefits from higher fresh air exchange to develop well-defined shelves. - Mist and monitor daily
Keep surfaces lightly moist and watch for contamination or drying; consistency is key indoors.
