About Our Substrate

Originally, Chefs Mushrooms started by supplying fresh Oyster and Lion’s Mane mushooms to well established farmer’s markets. Our mushrooms were deliciously amazing and became incredibly popular. The mushroom vendors urged us to grow more mushrooms, so we did.

We soon realized we could create amazing mushrooms, consistently. This was no accident. Behind the scenes, we were methodically operating a sterilized laboratory and grow facility. Processes we use for mushroom cultivation were developed over years of experimenting.

But what really set us apart is (was) a big huge secret. We make our substrate the hard way, starting with 100% natural raw materials. Our wood is harvested from responsibily forested areas throughout the SW. Our farm fresh ingredients are grown and harvested in the fields of local farmers throughout the SW.

Shiitake Mushroom Facts

Shiitake mushrooms (lentinula edodes) are widely cultivated edible fungi native to East Asia. Grown on hardwood logs or substrate blocks, they thrive in cool, humid conditions.

Known for their umami-rich flavor and firm texture, shiitakes are used in various cuisines worldwide. Their meaty texture makes them a favorite in stir-fries, soups, and vegetarian dishes.

Nutritionally, they’re high in B vitamins, fiber, and contain lentinan—a compound studied for immune support and anti-cancer properties. Shiitakes also support heart health by reducing cholesterol.

With both culinary and medicinal value, they’re a popular choice for chefs, herbalists, and health-conscious consumers alike.
